Put the cream cheese, double cream, sugar, lime zest and juice in a bowl. Add 2 teaspoons of the pineapple juice from the can and whisk until thickened. Spoon the creamy filling onto the biscuit base.
Cut the pineapple in half lengthwise, remove core, and cut each half into six segments, allowing two slices per serving. Finely dice two of the pineapple segments, and set aside in a bowl.
Pineapple flesh is eaten raw in salsas, desserts and sweet or savoury salads. Pineapple juice or purée is also good in exotic fruit drinks such as smoothies, especially those made with coconut water.
