2020年5月6日 · Pre-hopped extracts should never be boiled. So make sure what kind of LME you have there. It's surely not necessary to boil (unhopped) malt extracts (i.e., LME or DME) either. Adding to hot or boiling water and keeping at pasteurization temps of 150-160F for 15-20 minutes is plenty. IMO, it tastes better if not boiled for an hour.

Flaked oats don't appear to be the equivalent of this hydrolized oat extract as this has been subject to enzymatic conversion yielding a sugar content in addition to proteins.

2011年8月1日 · That said, sometimes I can taste an extract-y flavor in extract beers. It's not bad, but it's often there. Using techniques like adding any LME at the end of the boil, fresh extract, good water, fermentation temperature control, etc will minimize that and then you get a great beer, even if extract makes up the bulk of the fermentables.

Saving off some wort to add the sugars back in can prove to be a pretty good idea, if you're going for having only the appropriate sugars in the beer, but it does take some calculation.

2020年9月14日 · Main reason is LME comes in cans of certain volumes. Fractional cans don't exist, while once a can is opened it should be stored in the fridge and used up within a few weeks. DME also stores a lot better as long as it's kept dry and in its original plastic bag.

It will also be a good idea to use a pitch rate/starter calculator. Just making a certain size starter may not propagate the number of cells you need for your beer.
