A sourdough culture based on rye flour is easier to maintain, does not go into a slurry when you forget about it, is easier to stir because it has almost no gluten and smells very nice, a bit like fruit.

I've been making this for nearly 4 years and it's not my go-to anymore but if I need bread fast, it's what I do. 700g bread flour 504g water 404g starter (fed 1:8:8 overnight) 19g salt Mix, rest 30 mins, stretch and fold 3x every 45 mins.
